Markouk break originates in the mountains of Lebanon. It is made from whole, organic wheat and is hand-kneaded the day before. It's baked in a "saj" an oval, thin, metallic oven after it has been spread and thinned on a wood table and placed on a round pillow which serves to stick the dough on the hot oven. It is cooked in seconds. The result is a thin and pliable bread sought after for sandwiches of all kinds. Once it's dried and broken up, it replaces chips to be eaten alone or with a dip.
